Black Bean Salmon

Yield:  Serves 6 to 8
I put this near the top because we serve it a ton when people come over. It's simple, delicious, and has only three main ingredients, but it tastes like it has fifty. You can find the garlic and black bean sauce in the Asian aisle of almost any supermarket. What helps make this great is that the salmon is broiled instead of baked which means not only
RECIPE INGREDIENTS
1 cup apricot preserves (which is pretty much the same as jam, isn’t it?)
1/3 cup "black bean and garlic sauce"
1 whole salmon fillet, about 2 pounds
2 tablespoons finely chopped green onions (scallions), white and light green parts only

DIRECTIONS
1. Preheat the broiler to high.


2. In a small bowl, combine the apricot jam and black bean sauce and mix well. Cover a baking sheet with foil for easy cleanup later and spray with nonstick stuff. Lay the salmon on the foil


3. Spoon the sauce over the top to cover all of the salmon. Broil for about 7 minutes for about every inch of salmon thickness not inch of salmon length, because that would be really bad. Remove to a platter, sprinkle with the green onions and sesame seeds, and serve. Prepare to be congratulated.
