Deviled Potatoes

RECIPE INGREDIENTS
3 pound red potatoes, or other waxy-style potatoes, cut into 1-inch pieces
3 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon red pepper flakes
Salt
DIRECTIONS
Preheat the oven to 400 degrees F.


Place the potatoes in a roasting pan and coat them with half the olive oil. Roast the potatoes in the oven for 40 minutes, stirring occasionally.


While the potatoes are cooking, mix the remaining olive oil with the garlic and the red pepper flakes. After the potatoes have cooked for 40 minutes and are tender and lightly browned, stir in the seasoned oil and garlic, and roast for 10 minutes more. Season to taste with salt and serve.
