Grandma's Chocolaty Bread Pudding

Preheat oven to 325 degrees F. In a medium saucepan, bring cream, 1/2 sugar, and milk or soymilk to a simmer, stirring until sugar dissolves.

Remove from heat, add 1 cup chocolate chips and whisk until the chocolate is melted and the mixture is smooth.

Whisk egg and vanilla together in a large bowl. Gradually add the hot chocolate mixture, whisking constantly. Cool chocolate custard for about 10 minutes, stirring frequently.

Add bread cubes and remaining 1 cup chocolate chips to custard mixture and mix well. Pour mixture into a large baking dish and sprinkle 2 tablespoons sugar over mixture. Bake until custard thickens and mixture sets, about 50 minutes. Serve warm and enjoy!
