RECIPE INGREDIENTS
For Salad:
2 grapefruits, peeled and segmented
1 1/2 cups shredded arugula
2 cups lightly packed watercress leaves
3 green onions, chopped
For Dressing:
1/2 cup olive or safflower oil
2 tablespoons walnut oil
1/4 cup grapefruit juice
1 tablespoon grated ginger
2 tablespoons chopped fresh mint

DIRECTIONS
FOR SALAD AND DRESSING: Toss the grapefruit, arugula, watercress and green onions in a large bowl. Combine remaining ingredients in a medium bowl. Season dressing to taste with salt and pepper.


TO SERVE: Toss the salad with enough dressing to coat, and serve immediately.
