Herb-Wine Marinade

Yield:  Makes: about 1/2 cups
RECIPE INGREDIENTS
1 cup dry white wine
1/2 cup olive oil
1/2 teaspoon cracked white peppercorns
1 tablespoon white wine vinegar
1 clove garlic, crushed
1 small onion, sliced (optional)
1 tablespoon finely chopped fresh herbs (see note)
DIRECTIONS
Mix all ingredients together in dish in which food is to be marinated. Use for lamb, veal, chicken, shellfish and fish, or as directed in recipes.
*Omit onion if using for seafoods.


Note: Use a mixture of herbs to complement the food, such as:


  • Lamb-thyme, parsley, rosemary mint


  • Veal-marjoram, tarragon, parsley, sage


  • Chicken-marjoram, thyme, parsley, tarragon


  • Seafoods-dill, marjoram, parsley chervil


  • Serving Size = 1 tablespoon
