Lemon-Ginger Shrimp

RECIPE INGREDIENTS
3 pounds jumbo shrimp
1/2 cup olive oil
2 teaspoons sesame oil
1/4 cup lemon juice
1 onion, chopped
2 garlic cloves, peeled
2 tablespoons grated ginger
2 tablespoons fresh coriander (cilantro) leaves
DIRECTIONS
Shell shrimp, leaving tails intact, and remove vein. Pour oils into bowl of food processor, add remaining ingredients and process until pureed. Place shrimp in a bowl, pour on marinade and let stand in the refrigerator for at least 2 hours. Thread the shrimp on metal skewers or bamboo skewers that have been soaked in water for at least an hour. Barbecue shrimp for about 5 minutes, turning and basting frequently with marinade. Just before serving, brush shrimp with the remaining marinade.
