Mango Salsa

Yield:  Makes 2 cups
This sauce is ideal as an accompaniment to grilled meats, fish, or poultry.
RECIPE INGREDIENTS
2 ripe mangoes, peeled
2 scallions, thinly sliced
2 tablespoons chopped cilantro (coriander) or Chinese parsley
1 tablespoon grated fresh ginger
Juice of one lime, strained
1/2 teaspoon low-sodium soy sauce
2 drops tabasco sauce
DIRECTIONS
Cut the flesh off both sides of each mango, as close to the large flat seed as possible. Trim any extra flesh from around the edge of the seed. Chop finely.


In a medium bowl, combine the mangoes and remaining ingredients. Refrigerate.


Serving Size = 2 tablespoons
