Poor Man's Steak

This Mexican favorite from Maria Molina de Mantecon is delicious and easy to prepare. Bistec is an inexpensive thin slice of beef, very simular to a minute steak. The other ingredients to prepare this dish-potatoes, poblano chiles, tomatoes, and onions- are found in any Mexican kitchen.
RECIPE INGREDIENTS
1/3 cup vegetable oil
1 lb steak, thinly sliced
1 teaspoon salt, or to taste
1 teaspoon pepper
3 russet potatoes, cut in 1/2-inch slices
2 onions, sliced
3 poblano chiles, toasted, skinned, cut into strips
4 tomatoes, cut in 1/2-inch cubes
1/2 teaspoon thyme
1/2 teaspoon marjoram
1 cup chicken broth or water, to cover

DIRECTIONS
Heat 2 tablespoons of oil in a large frying pan over high heat. Sprinkle the steaks with the salt and pepper and brown them in the oil, turning once. Remove the meat from the pan and set aside.

Reduce the heat and separately fry the potatoes, onions , and chiles, each for a few minutes, using the remaining oil as needed, and remove from the pan. Fry the tomatoes for a few minutes, then return the meat and the vegetables to the pan.

Season with the thyme and marjoram. Add the broth. Cover and simmer until the potatoes are completely cooked. Serve from the pan so the dish stays hot.
