Red Wine and Mustard Marinade

Yield:  Makes 6 cups
RECIPE INGREDIENTS
2 1/2 cups dry red wine
2 cups olive oil
1/2 cup port
1/4 cup balsamic vinegar
1/4 cup Dijon mustard
2 onions, sliced
2 garlic cloves
2 bay leaves, crumbled
Several parsley sprigs
2 tablespoons brown sugar
Several black peppercorns
DIRECTIONS
Combine all the ingredients in a bowl. Place meat in a shallow bowl; pour on marinade. Marinate, covered, for several hours or in the refrigerator overnight. Occasionally brush with the marinade during cooking.


NOTE: This marinade is suitable for red meat and game. This quantity of marinade is enough for 20 medium-size pieces of meat.
