Romaine Lettuce and Pears with Parmesan Dressing

RECIPE INGREDIENTS
1 small head romaine lettuce, washed, dried, and torn into small pieces
2 Bosc or Anjou pears, peeled, cored, and sliced
For Dressing:
1/2 teaspoon Dijon-style mustard
1/4 cup olive oil
2 teaspoons red wine vinegar
2 tablespoons freshly grated parmesan cheese
DIRECTIONS
In a salad bowl, combine the romaine lettuce and pears.


In a small bowl, combine the mustard and vinegar. Gradually whisk in the olive oil. Finally, whisk in the Parmesan cheese.


Pour the dressing over the salad and toss.
