RECIPE INGREDIENTS
2 tablespoons
olive oil
1 clove
garlic
, halved
2 cups 1/2 inch fresh white
bread
cubes
3 1/2 oz
feta cheese
, cubed
2 medium
tomatoes
, cut into small wedges
1 small
cucumber
, sliced
1/2 cup sliced
shallots
1/2 large red
bell pepper
, cut into chunks
1/2 cup
black olives
1 head romaine
lettuce
, washed and torn
2 tablespoons finely chopped Italian
parsley
For the Dressing:
3 tablespoons
olive oil
1 tablespoon
white wine vinegar
1 clove
garlic
, crushed
DIRECTIONS
Heat the olive oil in a frying pan. Add the garlic and the bread cubes and sauté until golden on all sides. Drain on kitchen towels.
Combine the croutons and all of the remaining salad ingredients in a large bowl.
FOR THE DRESSING:
Combine all of the dressing ingredients in a small bowl. Whisk thoroughly until combined. Pour the dressing over the salad and toss gently but thoroughly. Season to taste with salt and pepper.
