Smoked trout gives this delicious salsa an added dimension of flavor and texture. At Lake Austin Resort Spa, this salsa is served with Blue Corn Tortilla Chips.
RECIPE INGREDIENTS
8 ounces smoked trout filet, flaked (see note)
1 tomato, seeded and diced
1/2 cup frozen corn kernels, thawed
1/2 cup zucchini, diced
1/2 cup red onion, diced
1/2 cup pinto beans, drained, rinsed
2 cloves garlic, minced
1/2 small avocado, diced
1 cup cilantro, chopped
3 tablespoons lime juice
1 teaspoon sugar
1 teaspoon chili powder
1/2 teaspoon salt
DIRECTIONS
Combine all ingredients. Chill.


NOTE: At Lake Austin Spa Resort, rainbow trout is smoked over mesquite wood for about 45 minutes.
