Snow Peas and Carrots with Mint

Yield:  Makes 4 servings
RECIPE INGREDIENTS
2 tablespoons vegetable oil or unsalted butter or margarine, softened
1 tablespoon orange juice
2 tablespoons finely chopped fresh mint
1/2 teaspoon salt
3 cups water
2 medium carrots, thinly sliced at an angle
1/2 pound snow peas, trimmed
DIRECTIONS
In a bowl, combine the oil or softened butter, orange juice, mint, and salt, then set the mixture aside.


In a saucepan, bring the water, lightly salted, to a boil. Add the carrots and cook for 1 or 2 minutes. Then add the snow peas. Return the water to a boil and cook for 1 minute more. Drain the vegetables.


Place the cooked vegetables in the bowl with the mint mixture. Toss to coat evenly, and serve.
