Stuffed Swordfish Rolls

This is a typical Sicilian dish. It is mainly found in Messina and the surrounding area, but you will also find it served in many other parts of the island, especially in family-run trattorie.
RECIPE INGREDIENTS
3 tablespoons olive oil
1 onion, minced
5 oz lean swordfish, minced
1 basil sprig
1 tablespoon chopped flat-leafed parsley
3/4 cup dry breadcrumbs
3 oz sharp provolone cheese, finely diced
2 eggs
salt
Pinch of minced hot chili pepper
8 oz thinly sliced swordfish

DIRECTIONS
Put a skillet on moderate heat with a little oil. Add the onion and gently fry. As soon as the onion begins to color add the minced swordfish, basil, parsley and breadcrumbs. Fry gently for 5 minutes so the flavors will blend.

Put the mixture through a food mill. Add the provolone, eggs, a pinch of salt and minced chili, and mix well.

Lightly flatten the slice swordfish with a meat mallet. Spread a little of the prepared filling on each and roll up and fasten with toothpicks.

Either barbecue the involtini or broil or grill them and serve with salmoriglio.
