A light, healthy start to the day, this homemade granola makes use of a variety of fruits and nuts according to what is readily available.
RECIPE INGREDIENTS
1 tablespoon raisins
2/3 cup thick plain yogurt
1 tablespoon honey
1/4 cup rolled oats
2 tablespoons almonds or hazelnuts, toasted, skinned and chopped
1 passionfruit
1 small mango, cubed, or 1 banana, sliced, reserving a few pieces for decoration
A few extra toasted almonds, to garnish

DIRECTIONS
Put the raisins in a small bowl, pour in boiling water to cover and set aside while preparing the muesli.


In a small bowl, stir the yogurt, honey, rolled oats and nuts together.


With a small sharp knife, halve the passionfruit. Using a teaspoon, scoop out the seeds and pulp and add to the yogurt mixture. Drain the raisins and add them to the mixture with the mango or banana. Mix gently until just combined.


Spoon into a bowl and decorate with the reserved fruit and the almonds.


CHEF'S TIP: If you like a sweeter muesli, drizzle with a little extra honey or Demerara sugar before eating.


Fresh fruits of the season such as strawberries, peaches, pears or any others of your choice can also be used.
