Use for chutneys, pickles or dressings, or use a little bit to add heat and tang to sauces.
RECIPE INGREDIENTS
12 small red chilis
3 large shreds lemon zest
2 cups white wine vinegar

DIRECTIONS
Place chilis and lemon zest in a bottle. Top with vinegar, seal and store in a dark cupboard for 2 weeks. The more chilis used, the hotter this vinegar will be; if you prefer a milder vinegar, use fewer chilis.
