Warm Whole-wheat Spaghetti with Red Cabbage and Goat Cheese

RECIPE INGREDIENTS
1 tablespoon walnut oil
2 tablespoons olive oil
1 cup shelled walnuts, roughly chopped
8 oz whole-wheat spaghetti
1 clove garlic, chopped
2 tablespoons balsamic vinegar
1 red onion, thinly sliced
1/2 small red cabbage, finely shredded
1 large green apple, cut into julienne
1 tablespoon finely chopped parsley
3 1/2 oz goat cheese, crumbled

DIRECTIONS
Heat the walnut and olive oils together and sauté the walnuts, stirring constantly, for 2 minutes. Remove from heat. Put the walnuts on a paper towel to drain. Reserve the oil in a frying pan.


Bring a saucepan of salted water to a boil and put the pasta on to cook.


Add the garlic and vinegar to the remaining oil in the pan. As soon as the mixture is hot, add the onion and sauté for 30 seconds. Add the cabbage and stir-fry for 1-2 minutes, until the cabbage is just wilted. Season to taste and pepper. Add the apple and parsley and cook for another 30 seconds. Stir in half the walnuts.


Drain the pasta and stir in the goat cheese while the pasta is still hot. Toss the cabbage mixture carefully through the pasta and serve warm, garnished with the remaining walnuts.
