Potatoes are the world's most popular tuber and are available in hundreds of varieties including russet, long white, red, Yukon gold, and yellow fin. Specific potatoes, such as russet, are best for baking and frying where others, such as red potatoes, are best for boiling. Potatoes of one type or another are available year-round. Choose potatoes that are firm with a tight unblemished skin, having no sprouts or green areas. Store potatoes in a cool dark area.
