Terrific Quick Dinner
Used half Iberico cheese (blend of cow, sheep, and goats milk) and half plain old shredded Jack/Colby from WalMart. Substituted Sara Lee thin buns and minced green peppers for bread and zucchini. It was quick and absolutely sensational. This will be a regular and would probably be good no matter what kind of cheese and/or veggies are used. I spread the salsa on the bread so spicy factor can be controlled for the cowards in the family.

This is really good, you would never guess it is meatless. It has started a panini craze at my house! My husband keeps asking me when I will make these again.
