Easily Made to Your Taste
This was a crowd pleaser and a very flexible recipe. It can be changed to accommodate what you have on hand or like best. The dressing was simple to make and delicious. The English cucumber is a good choice because it stays crisp and firm. I had Vegan guests so I served the cheese and dressing on the side. Homemade jalapeno cornbread muffins were a perfect compliment Yumm! Next time I will add chopped fresh cilantro and dip the advacado in lime juice to keep it from turning dark.
