Good but measurements need tweaking
As a person who bakes bread, measuring by weight is always the best method and what I prefer--but in this recipe, it is contradictory. The recipe says that one cup lightly-packed shredded zucchini is 8 ozs. Not so! It's about 3-4 ozs.. I used over 2 cups shredded zucchini (about 6 ozs.). For one cup shredded zucchini, you need one VERY TINY zucchini or about 3 ozs, NOT 8 ozs.! Also, 2 Tbs. walnuts is too little. Add at least 4. Otherwise, tasty & moist.

Freeze zuchini
Love to freeze this. note you can also freeze the grated Zuchini in bags size just the amount of ingredient. NOte when you thaw put a folded paper towel in the bag to get any extra water out of the zuchini.

Yummy
Easy to make, very yummy, and moist. So if you have a zuccini sitting around you are in luck :).
