So delicious!
Loved this soup! Here was the spin I put on it. I used a chicken hindquarter( took off the skin) and put it in a La Creuset with the chicken broth and onions for 1 hour. Then I pulled it out of the oven and added the rest of the ingredients, popped it back in the oven, covered of course, for about 10 minutes. Then I cut up some cold avocado, added it to the soup before serving with tortilla slices and cheese. Spicy and delicious!

Fair but can be better and healthier
Loose the canola oil...it should not even be listed as a food! Olive oil. Loose the cilantro...overused pseudo mexican flavor! Get New Mexico red chili powder and follow the directions for a red sauce. The Culinary students made it here at school and I, a Maintenance Instructor, went up and corrected their recipe.
