Endless debates!
Deviled eggs are like potato salad. Every family/mom/cook makes it just a little bit different. Mayo/Sour Cream/Miracle Whip, with or w/o onions, with or w/o pickle relish, sweet or dill pickles, yellow mustard or dijon, paprika or not, etc. It is an iconic american food we never get tired of eating, and will eat in almost any known variety. But in the end, it will almost never be as good as "your Mom's" or your own. My favorite have a dollop caviar on them. Go figure. Make to YOUR taste!!

easy deviled egg
My recipe is so very different but my family loves it. cooked egg yolks, mayo, mustard, white peper, salt, pinch of sugar, a dash or two of ketchup for color, hot sauce and papkia.

Another additional ingred.
I also add a some spoonfuls (or to taste)of deviled canned ham to any deviled eggs besides the dry mustard. With my dill weed and sweet pickle relish, I am often asked for the receipe! Delicious!!!

Deviled = Mustard
A deviled recipe is like a martini recipe: each requires a basic, standard ingredient. For the martini, it's gin or vodka. For a deviled recipe, it's mustard. Without that ingredient, it just isn't so. This is some sort of stuffed egg recipe, but IT IS NOT DEVILED.

No devil in the eggs
The missing ingredient in this retro recipe is DEVILED HAM - you know, the stuff in the little can. Add that plus some good mustard, etc. THAT is the key.

Missing mustard - and a little sweet pickle relish
Obviously mustard must be there - or throw it in the garbage! I use Dijon mustard for a little more zing, Sour cream (my wife hates mayonaise, some bad memory from childhood, I think), a little sweet relish (2 tblsp), a few pimentos (finely chopped, for color), a touch of sugar,to taste - actually a garnish of chopped green onion is sufficient. THERE!! A perfect deviled egg receipe handed down from my mother (RIP) There are never any left on serving plate after dinner...... Enjoy

The key word is Deviled
The reason they're called 'Deviled" is because of heat. That is what is missing here. This is an egg salad recipe. A decent mustard, hot suace, or wasabi will add the appropriate heat.

I Know the Missing Ingredient
To respond to the reviewer who said that it is missing a key ingredient (and to other readers to help prevent them making a disappointing recipe!), the missing ingredient is MUSTARD. Every self-respecting southern woman knows this. The standard, old-fashioned recipe is the mashed egg yolks, mayonnaise and mustard. Add a little salt and pepper, if needed. Sprinkle with paprika and chill. That's it.
