Best Pork Chop I've Ever Eaten1
This recipe is awesome! It is possibly the best pork chop I've ever eaten. Lean pork chops have a real tendency to be bland but these are far from it. I doubled the salt in the brine and brined them for several hours. Brining makes a significant difference in chops. I used bone in chops which were fine. I knew from the smell the instant they went on the grill they would be good, but there far beyond good. The flavor is really unique starting out with the sweet cocoa followed by heat

I gave this recipe to my son-in-law to try. He tried it that night at a dinner party. Everyone thought it was the best pork shop they had ever eaten and asked to take home leftovers. He followed the recipe except that he made the chops in the smoker of his grill. I have made these at home in the oven and the results were good also.
