interesting Albondigas
I've been cooking my recipe for this soup for decades, I stole it from a gourmet Mexican Resteraunt. The ingredients vary in mine, the addition of potatoes,cut in cubes, also I don't drain my tomatoes,(the juice is yummy)

Delicious, Light but Satisfying
I made this exactly as written (except I had med grain rice), and it is delicious. It somehow tastes rather light, but is very satisfying/filling. I made corn griddle cakes to go with, and served a red Spanish wine. A great cold weather dinner.

The best albondigas soup
I believe this is the same recipe I have made many, many times. Always gets great reviews. The best I have tasted and made. This recipe is a keeper!!!! I got the recipe from the "Two Hot Tamales" book named "Cantina" I encourage you to make this soup. It's delicious!!!!
