how to wrap?
It would have been nice it the recipe was more clear about how the burger should be wrapped by the pancetta. Does it intend to wrap the burger around the sides like you might wrap a filet? Or, should it be wrapped across the top and bottom of the burger (so when it cooks, it mostly browns the pancetta and only a little of burger)?

Recipe mistake!
This is a perfectly good recipe from Steve Raichlen, the barbecue guru, but there is a major misprint in it.....the 3/4-inch thick slices of Gorgonzola called for should be only 1/4" thick!
