Add the Pasta back in
REALLY good recipe but I agree with the fellow reviewers that 10 cups is too much water. However, what I did was make the puree with 2 cups water, use 3 cups of stock in the soup. I then cooked a cup of dry star pasta to al dente and added it and two cups of water to the soup. The pasta soaks up quite a bit of liquid still. Definitely WAY more than 4 servings but the liquid is no longer wasted. The bean puree adds great texture and the star pasta makes it all the more pleasing to kids' eyes

Definitely a Hardy Soup
I tried this recipe on a frigid day. It really hit the spot. I would highly recommend it. The second time I made the soup I added green beens, shredded cabbage and tortellini.

Delicious Soup
I exchanged vegetable stock for water and reduced it to 4 cups. Still used 2 cups of water to puree beans. This recipe definitely makes more than 4 servings, but it is delicious. Served with warm Italian Bread it is a meal by itself.

Misprint -- soup
Minestrone with White Beans and Italian Sausage Soup sounds delicious -- but 16 cups of soup does NOT "Serve 4" -- more like 8 to 10 generous servings. Are there any more mistakes in this recipe, i.e., the 10 cups of water?
