very good, comforting soup. Will make again and add more spice. Also may try to thicken a bit. Used all chicken stock instead of water, worked well.

Colorful
I made this because it caught my eye, so bright and colorful. Hubby doesn't really like black beans, so I only used 1 can and drained/rinsed them well, but added corn for some yellow too. We will make it again, for sure. It was a nice change from the regular vegetable soup.

Hit with Family
This is a wonderful way to use up leftover corned beef. I ended up adding more black beans and spiced it up with some cayenne pepper. The family loved it. I will certainly make it again.

This soup has tons of potential... make sure the corned beef is cut crosswise so it is tender. The deli place I went to wasn't so cooperative. I added some sauteed garlic in the beginning and also didn't drain the black beans thouroughly to leave it a little thick. I would add more jalapeno or hot sauce to spice things up a bit.
