Good but lacking color
The taste was good, but as far as serving goes, even with the pesto, theres a major lack of color.

Good Salad!
I made this chicken salad with a few substitutions. Instead of the rice, I used barley to boost the protein and add a nutty flavor. I used a jar of pesto, a deli chicken, and a 6 oz container of nonfat greek yogurt. I served the salad in whole wheat wraps with a simple fruit salad on the side. It was delicious! The leftovers look a little dry so I will probably add more yogurt to make it creamy. Next time I will try playing with the ingredients more, but I will definitely make it again! Enjoy!
