A nice surprise!
I tried this thinking that it would be nutritious and inexpensive, which it is, but I was surprised by how much I liked it! It was so much better than I was expecting. The peppers (I used yellow and red, which probably made the dish a bit sweeter and lighter)were a great chunky contrast to the smooth grits and the beans were soft and creamy. I used 5-minute grits, and they set up perfectly, no problems there. It also reheated well in the microwave for lunch later.

Not too good
I live in Charleston SC the world headquarters for grits...these are way too runny and I also added some corn to my black bean mix but it still didn't have enough texture to contrast with the soft liquid grits. Great idea but we gave it a thumbs down after scooping up with tortilla chips.
