Easy and Quick!
This soup is tasty and easy. It satisfied the entire family too. I used tubular pasta rather than egg noodles and it was very yummy. I added them when I added the potatoes. Perfect soup for cold weather!

Good, but....
The recipe looks incredibly tasty, but the sodium content is incredible scary! This has more than one days worth of sodium in one serving. Finding a way to lower the sodium without affecting the taste would make this a five cup review!

Comforting!
I finished this soup off with a little buerre manier. Mixing 3 Tbsp. flour and 3 tbsp. softened butter and adding piece by mixing until it comes to a simmer. Let simmer about 3 min. This gives it a little more body and is not watery.

Absolutely delicious!
It was amazing how simple the soup recipe was to make, yet it has such depth of flavor and is so satisying. Perfect for vegans and carnivores alike!

Add more flavor
Add a bay leaf to the simmering soup. It ramps up the flavor.

Great recipe
I prefer to use homemade chicken broth for this, and instead of egg noodles I use DaVicci alphabet pasta. To the vegetables I add a cup of frozen corn and a cup of frozen peas, at the very end of the cooking time. Zucchini is a great addition in the summer...fresh from the garden.
