Tried this recipe and liked it alot. I agree with replacing brown rice for white. It holds up better. . Also, I left out all the olive oil but 1 tbsp I used to coat the rice before adding.. With this healthy recipe, no need for 38%of the calories to be from fat.

Simply Delish!
The ingredients are simple, & taste great. I improvised on the recipe a little. First, I cooked brown rice with a little beef stock & butter. I also substituted rinsed, canned black beans & corn (much faster, easier). Turned out great. Love it
