Brining is key!
I had looked at turkey recipes that included brining, but always thought it was just a new gimmick. Little did I know that brining would be the ultimate 'gimmick' that would bring traditional Thanksgiving to another level of excellence. The results far surpassed any turkey that I have ever made or eaten - it was like a whole other meat. Sweet, juicy and absolutely mouthwateringly tender. Note that I was not able to hickory smoke it afterwards but no matter. Still the best ever!

Absolutely Delicious!
We made this last night for some friends and everybody raved about it. It was delicious! The turkey was very moist and flavorful and overall pretty easy to make. We also made gravy from the drippings and it was amazing on the mashed potatoes with the hickory smoke flavor. Give it a try. If you like smoked turkey, you will love this!

This is one of the best brines I've used for turkey. If you are not a dark meat fan you will convert after tasting this bird. The skin carmelizes very nicely while all the meat is a tender as can be. If you are using a gas grill make sure you have enough fuel to make it through the cooking. If you don't have a 5 gallon bucket you can get one at most home stores or I've used a large insulated water jug with ice in it during the warmer months to insure proper storage temperature since not very many folks have a large enough fridge to keep the turkey cold enough while in the brine.
This recipe gets rave reviews everytime I serve it. Enjoy!

This recipe is well worth the effort. The turkey is moist and flavorful. I have made this for either Thanksgiving or Christmas for the last 7 years.
