This is my favorite holiday recipe
I've used this recipe for the last 3 years for Christmas and Thanksgiving. It's everyones favorite! Every year I have family and friends and my kids teachers begging me to make them one:)

Pumpkin Gingersnap Cheesecake
I made the Pumpking Gingersnap Cheesecake for Thanksgiving. My family gave it rave reviews. I lost track of how many servings my son had during the day and evening. He said it was the best cheesecake he had ever tasted. Once he returned home from the holiday he called to get the recipe. The one thing we all liked most was it isn't so rich as many cheesecakes are, and you can eat a big slice.

Just not the best recipe...
Well, the cheesecake hasnt cooled yet so I dont really know how the final outcome will be, but so far I am not impressed. I have been making cheescake for years, and have never had one crack so badly while cooking (this was following the 325 degree cooking instructions) I cooked it for 75 min at 325 and it still isnt all the way set, but cracked everywhere. For such a complicated recipe it doesnt seem to work out so well. Next time I will stick to something that wont waste time and money :(

Reduce temp & time
Reviewing other similar Cheesecake recipes, all others recommend 325 F degrees and 60 - 70 minutes. Suggest reducing temperature and checking at 60 minutes and add time as required to complete coooking. Make sure you're familiar with how to tell a cheesecake is done. Look for reputable guidelines.

Baking instructions are Incorrect
This recipe stated to bake the cheesecake in a 375 degree oven for 1 1/2 hours. The cheesecake was ruined because I was adament about following the baking instructions! It was charcoal. Also, after tasting a salvageable bite-TOO GINGERY!

Cooking Time or Temperature must be wrong!
This recipe calls for cooking the cheesecake in the center of a 350-degree oven for 1 1/2 hours. I found that to be 30 minutes longer than necessary, so be sure to check it at 55 min - 1 hr. It quite possibly could be that the temp. was supposed to be 325 deg. instead of 350, which would make more sense. Otherwise, this was a deliciously smooth and rich cheesecake!
