Easy, cheap, delicious, and deep flavors.
Don't be tempted to rush the onions into caramelizing. Longer, gentler, slower cooking equals better flavor. Don't salt them until nearly done. Make extra for sandwich garnishes later in the week. OMG. Incredibly delicious. Use any creamy, flavorful cheese or ask your deli person for help, samples, etc. and use your imagination. I think even provolone would work. So good.

You have to be kidding!
I haven't tried this recipe. I live 150 miles from the nearest specialty store were the cheeses mentioned might be available. The rarer the cheese, the higher the price. Get real!
