Thought soup was awful
I made this recipe exactly as written. It was horrible if you ask me. It was putrid in color from I guess the leeks. No flavor and too thick. The squash weighed exactly as the recipe called for so I don't understand how all the other raters could say it was so good. I had to dump it, it was so awful and my husband and I think I'm a good cook. Puzzling?

Amazingly delicious!
This butternut squash soup is to-die-for delicious! It is extremely rich and decadent. You can make it a little healthier by using turkey bacon, olive oil for the butter and lowfat sourcream, but I don't know that I would mess with such a good thing!

excellent soup and easy too!
I LOVED this soup. My grocer was out of leeks so I used onions instead - still delicious! and using an emersion blender makes it thick and rich without the mess of pouring it into a blender. I thought the thyme might be overpowering, but it was just right. I'm passing it around to family and friends.

Drop the Dairy, keep the Squash
This recipe is tasty but the true virtue of squash is muddled by adding the dairy. I say do try this exact recipe but leave out the dairy. Try adding one half teaspoon of curry powder for a haunting subtle flavor, but keep the thyme too. Mace and nutmeg if you drop the thyme. Works with pumpkin too. Good to know at jack 0 lantern time. Grated appled worked well with the bacon as a garnish.

Great soup! Restaurant quality...
I have made this and added 1/4 C. of white wine. Made some sage croutons and it was heaven.
