Delicious
I followed the recipe exactly, but frosted the loaf, after it cooled a couple hours, with melted chocolate chips and a tablespoon of peanut butter added in. Yum! Also, the loaf had much more coconut flavor and moisture after sitting overnight. The coconut was a terrific new take on my traditional banana bread recipe.
