French Onion Soup suggestion MORE FLAVOR TIP
I find if I cook the onions in 3 stages I can coax more flavor from the onions adding salt to bring out the onion liquids during the saute. First cook 1/3 onions slowly until all the way brown, set aside, and cook the 2nd 1/3 of the onions in the same pan until golden,then add the remaining 1/3 and cook slowly until only clear, 3-4 mins adding tablespoons of beef or veg broth as needed. Return the browned onions & remaining soup broth and finish according to any recipe.

Everybody wants this recipe!
Even friends who brag about their french onion soup admit this is the best they've ever had! I skip the balsamic vinegar and add a bouquet garnis that has a bay leaf, 2 sprigs of fresh thyme, 2 cloves of peeled garlic, 10 crushed peppercorns and 5 parsley sprigs.

I love onion soup and this is the best that I ever ate. I make this soup for my friends for lunch and dinner parties and use this recipe -- everyone loves it and asks for the recipe. It is one of the few recipes that I haven't "tweaked" for my specific likes. The balsamic vinegar finishes this recipe.

This is a great adaptation of this classic. Simple and full of flavor, you can even tweak it to your taste. I love to stun people with this dish; it always pleases.
