Moussaka
Word of warning, Moussaka is/can be a time consuming dish to make! It's been a regular in the family for over 30 years. I make mine from knowledge, but this is a general (and good) recipe. You can always season according to taste/tradition and omit/substitute ingredients, but (sorry EVONNE, OR) there's no mozzarella in Moussaka ... EVER! I use a lamb/ground beef mixture, easy on the amounts of cinnamon and nutmeg and my Béchamel tends to be a lot richer/heartier.

Beef and Eggplant Moussaka
Even a child loved this! Save time by making the sauce while eggplant sweats. Also, pre-mix some sauce into the beaten egg, before adding it, using a wire whip. Lower fat by: substituting ground turkey and rice milk, use only 1 onion (total), low fat cheese, and just make 1/2 the sauce recipe, (which is enough and uses only 1/4 C butter), and lightly brush eggplant slices with olive oil and grill on a grill pan. There are enough other flavors without all the fat and it's still delicious.

NO GOOD!
I was so disappointed as I did the work..TO THE LETTER...and though I wanted to add some spices, I didn't as others said it was good as is. The meat sauce was OK but needed some spice. I love Eggplant so that was OK. The SAUCE was horrible in texture and flavor. All that butter instead of Mozzerella? Why? An easier way to an excellent Eggplant dish is use your favorite Spaghetti Meatsauce. Layer Mozzerella Cheese, eggplant and sauce. Healthier & doesn't send leftovers to garbage can.

This is the BEST Moussaka I have ever tried in my life. It took about 3 hours to prepare it but soooo worth it. I made it with ground lamb and it came out sooo juicy and amazing!

Yes it takes a lot of time and a lot of pans to wash, but well with the effort. Delicious, we used Merlo and southwest Faita seasoning for the herbs and it was excellent! We used ground lamb and it was excellent!

I've only had Moussaka once or twice before, so I may not be the best reviewer for the dish. This recipe was good, but not as good as it should have been for the amount of time (and dirty dishes) it took to prepare it. The cheese sauce was excellent, and I would use that sauce again in other dishes, but the Moussaka as a whole seemed lacking for all the effort.
