FABULOUS!!
This is one of the best and easiest cookies I have baked in a long time! Everyone who eats one comes back for more. The flavors from the spices are in perfect harmony with each other. The toffee adds that little "what is that" action and the crystalized ginger put it right over the top.

Fantastic and Festive
These are delicious--a great toffee/spice combo and super moist. Be sure to use PARCHMENT PAPER instead of buttering the pans or they will spread out really thin and look like cow pucks. Also: You may be able to find crystallized ginger in the produce section of the grocery store for much less than $7-$9 a bottle, so check there first (or ask). One last note: you can make them smaller; adjust the baking time by about 3 minutes per turn in the oven (so instead of 16 min total, only 10).

YUM!
This are AWESOME! The crystalized ginger cost $10 at the grocery store near my house. Despite the fact that they cost a small fortune for only 24 cookies...they're worth it! Will be making these for many years to come. BTW-couldn't find raw sugar and used plain ol' sugar. Also forgot to butter the pan and they still turned out excellent.
