Quik, but "complete???"
I have been yearning to make the eclairs of all types, and was pleased to see this recipe offered. However, when I got to almost the "end" of the recipe, I found an important factor missing... the baking/production. Traditionally eclair "shells" are baked prior to the filling. To me the recipe is incomplete without the standard baking instructions; so I won't be able to use it.

What are the weather issues?
I haven't tried this yet, but does anyone know whether is it best to make this when there is low humidity or does it really matter what the humidity level is?

This is not puff pastry...
I followed this recipe exactly, and it came out more like pie crust-very flaky. This is just not puff pastry!

Flaky and easy
I wanted to make turnovers and wanted something quicker than the traditional 2-day puff pastry recipe, and this one fit the bill. The pastry came out flaky and delicious. It makes more of a flaky than tender type of pastry. It worked great for my turnovers.

Rave reviews from family and friends
I love this recipe. And everyone who tasted the pear tarts, I made with it, loved them. Puffed and tasted great. Better than store bought (of course). Will be trying it for individual Beef Wellington and turnovers. Thanx, Lori
