Swiss Chard Lasagna with Fresh Tomato-Basil Sauce
I've made this Lasagna 3x recently because it's so good. And, what a great way to get kids to eat fresh greens! I've even substituted some of the Chard with Spinach, as well as with Collards and Kale. Whatever is in season and fresh seems to work great. Once, even used a good quality pre-made Marinara Sauce, and the no-boil Lasagna noodles, which both worked well in a pinch. You don't even miss the Mozzarella and it's not greasy, or heavy. I'll be making this one often!
