pretty standard
Latkes are my husbands favorite holiday food and although I havent made this particular recipe, it looks like the standard latka recipe. My secret for keeping the potatos nice and white after grating is to rinse all the starch off under cold running water and drain well. Great served with applesauce.

Vital step omitted!
After grating the onion and potatoes, you MUST remove the excess liquid or latkes won't brown easily. Simplest method is put the freshly grated onion/potato mix in a clean tea towel, wrap tightly and squeeze, or wring out, over the sink. Don't be gentle. Once water is removed, put onion/potato in bowl and continue prep as described.

missing ingredients on latkes
How much flour? I looked the recipe over several times but couldn't find out how much flour. Having never made these (or even tasted them_) I don't know how to flour them.

Never,never,never use flour. Matzah meal is the only proper binder.

Good ingredients
The proportions are right but the key to crisp latkes is to squeeze as much water out of the shredded potatos as possible

Crisp and delicious!
Make sure you roll grated potato and onions in kitchen towel to remove mouistre. That makes the difference between soft, soggy latkes and the crisp delights you will adore.
