Only if you have never had or don't enjoy Mexican food should you confuse this recipe with anything resembling edible nachos. I normally love America's Test Kitchen recipes but this one bites the Big Sombrero. Season the ground beef with taco seasoning (and not Lowery's or McCormmick's). Order GOOD taco seasoning from Pendery's Chili Supply in Ft. Worth, Texas or online). Do NOT use cheddar cheese on nachos. Use a good Mexican melting cheese like Queso Blanco, or Monterrey Jack & Velveeta.

I'll be making 4 of these for the Super Bowl!
1 recipe as shown for me and my daughter; 1 recipe for those who like mild salsa; 1 recipe for those who like a little more spice I'll add 1/2 extra tsp. of chili powder and use a medium salsa; and for those "macho men/women", I'll add an extra tsp. of chili powder and a hot and spicy salsa. Olives on the side for the last 3!

I will make this again as it was a big hit at my party. We served the olives on the side for those who aren't fond of them.

Well this was different approach to nachos for us. The wife & I enjoyed it. Our 22 year old son, was not so crazy about it. He's not crazy about anything with onions. I wasn't sure about the olives, so I only used half of what was called for, but we did like it. Next time I will use all of the olives called for. We also used the ' scoop ' type chips.
