This has become one of my family's favorite meals! I've made a few variations over time, but the basics are still great! I add about 1/2 a bag of frozen peas instead of the peppers. I've also used just sharp cheddar when I don't have any monterey jack cheese. I've also substituted pasta shells (small) instead of the egg noodles. I typically put shredded chicken cooked in the crock pot with taco seasoning instead of the cubed chicken. I've also used 3-4 cans of tuna instead of chicken.

I added a half can of milk for a creamier texture and it was a real family pleaser. This would make an excellent pot luck dish, too. If you substitute cream of mushroom soup for the cream of chicken and two cans of drained tuna for the chicken, this works very well as a tasty tuna noodle casserole as well.

The flavor of this dish was awesome! My husband is still talking about it a week later. When I took it from the oven, I thought it was going to be dry, but it wasn't. I used fajita pre-cooked chicken and topped it with a little sour cream.

I tried this and it was such a hit with my family. I put the left over in the freezer and served it (single serving) about 2 wks. later adding some more cheese on top. It was wonderful! I will use this again.

I was surprised at how good this recipe was. I usually don't care for recipes with canned soup but this one is an exception. You can make this in no time flat. I did add a small drained can of mushrooms to the casserole and I reduced the amount of noodles by half. I think it would be too dry with 12 ounces of noodles.
