Needs minor improvements
The flavors were very nice, however my experience with making it once was that the dish was too dry after I removed it to add cheese. I liquified 2 cans of stewed tomatoes and divided it between the 2 dishes. It helped, but not completely. Because I didn't have mozzarella, I used pepper jack cheese, about 6 oz and it added a nice amount of heat. Next time I might use less pasta. The spinach also didn't cook down enough, but maybe it was the variety because I am not in the US.

Do over
This is a definite do over & over & over at my house. Had some nice background heat. Did use fire roasted diced tomatoes because I had never had them before.It took a coordinated effort to pull this off in my tiny kitchen, but it was well worth it !!!
