How gross can you get?
4 cloves of garlic is too much in one recipe! I would never put 40 cloves in something, unless I was trying to make someone sick! This is awful!

Easy and delicious!

Old as the hills!
I don't remember which of the early cooking shows this was featured on... or perhaps it was in The New York Times. It is a great classic, and delicious every time. The garlic is sweet and pungent and the fresh herbs are delightful.

one of my favorite meals
I have been making this for years. Originally came from the Victory Garden Cookbook. I use legs and breast pieces (don't like thighs). It doesn't need any herbs - just triple the celery. The celery, infused with the garlic flavor, is the best thing about the meal!! It can be made just as well in the oven at 350 until falling off the bone. I don't measure anything, quit when I get tired of cleaning garlic and pour on the EVOO. Bread is a must to dip in the juices. Such an easy feast!

My Favorite Dish - and It Freezes GREAT!
This quickly became my and my daughter's favorite dish. When I make it, we eat that night (yummy) and then freeze the rest in portion sizes and grab a frozen pack through out the rest of the month! I simplified it quite a bit by seasoning with salt & pepper only then adding parsley before serving. Also I added some finely chopped onion or shallots towards the end browning the garlic!

I am a "Garlic Nut" and I cooked this with unpeeled and peeled garlic. I loved it both ways!!! Next time I'm going to put the garlic in as half unpeeled and half peeled. That way I have a bread spread and the strong garlic I love!! Margo Algarra
