Eggy, flat and lifeless.
I tried these for our New Years Day breakfast. Pancakes tasted very eggy with the texture of uncooked batter even when fully cooked. They started off fluffy on the griddle but despite the baking powder and many egg whites in the recipe ended up deflated and lifeless. The pancakes tend to stick to griddle, butter worked but still difficult to turn. This recipe had great potential however, ended up producing pancakes as temperamental as a soufle. No thanks. I will not make again.

Had to adjust, but they are a do-again for sure!
I rated this a "4" because as some other reviewers noted, I agreed that there were a lot of eggs, and thought the recipe would make too much batter. I halved the recipe, but used 3 beaten egg whites and mixed 2 egg yolks into the wet ingredients. The pancakes were fluffy and did not deflate, even after warming in the oven for several minutes. I had some leftover batter and made a few small pancakes the next day, and they came out as well as the first time! My family asked me to make them again

A new family favorite!
I made these pumpkin pancakes on Christmas day and they were a huge hit! I added extra cinnamon and nutmeg to the batter once it was completed. The whole family loved them!

Great recipe
I agree the amount of eggs seem high, but egg whites have very little taste and no cholesteral, no fat, just protien. Also, preferred staying with butter, it is much better for you than hydrogenated margerine which 'never' leaves your system. Also, buttermilk is better for you than 2% milk,It aids in digestion, much like yogurt. So I stayed with buttermilk, if I do substitute I will use only fat free yogurt or skim milk. Great, quite healthy recipe.

Could be improved
Only wanted to try out the recipe, so I reduced the ing's to 1/4 of the original. This resulted 8 pieces of 5". I replaced the butter with healtier margarine and the butter milk with 2% milk and lowfat plain yogort. (for the density consistency) I felt the recipe can use about half amond the egg as needed, the strong taste of eggs opaques the fravor of the pumpkin and everythging else. I used the 2 yolk in my wet ingredients as suggested in a earlier review, it made sense.

Don't forget the egg yolks!
After reading and re-reading the recipe, I realized the egg yolks were not included in the directions. By reviewing other scratch pancake recipes, I added the yolks to the pumpkin / buttermilk mixture. May seem like a "duh" to those who are in the know, but I'm not a pro and wanted to make sure. Pancakes were delicious - and as another reviewer said, yes, they did deflate, but were worth the effort, especially when the syrup is warm and the weather is chilly!

I typically am a fan of just about anything 'pumpkin' and was extremely happy to come across this recipe on Cooking.com. However, I have to say that I didn't care for this recipe -- although the pancakes initally came out beautifully light and fluffy, they deflated almost immediately. They also tasted rather 'eggy' due to the 8 egg whites. The recipe makes a tremendous amount of batter, enough for several dozen pancakes, but the leftover pancakes didn't keep well. All in all, it was a labor-intensive recipe with less-than-mediocre results. In my opinion, not worth the effort and not one that I'd make again.
