DELICIOUS
Fixed this recipe last night for 4 people. Everyone raved about it. I did get the chuck roast at a butcher shop as opposed to a supermarket meat counter. Will most definitely prepare this one again.

good flavor but dry meat and greasy gravy
I don't know exactly how you're supposed to degrease the gravy leftover. The meat had a great flavor but it was dry. The gravy was nasty greasy. I wouldn't make this again.

Finally strayed from my ancient family pot roast recipe and used a crock pot for this - the coffee and balsamic vinegar really give this a wonderfully different flavor. I chose not to use the corn starch...the onions give 'the juices' a nice texture as is.
