loved this recipe
I have tried this recipe a couple of times now and have not been disapointed. Before this recipe, I had purchased a frozen loaf carrot cake at the grocery store. For emergency's I was wondering if anyone has purchsed one called OREGON CARROT CAKE WITH CREAM CHEESE FROSTING in the freezer section.Kind of a last minute visitor desert. otherwise I will just make this ahead and freeze it.

Unpleasant Texture
I made this with no variations on the recipe and for me it was TOO moist. The cake had a wet sponge texture that I really didn't care for and while carrot cake is my parent's favorite, they politely declined to take any portions of the cake home with them. And no, it was not undercooked. The toothpick came out clean. The taste itself was good, but I won't be baking from this recipe again.

Fabulous!
Made this for Easter; family loved it! Very moist & flavorful. I could not find the pastry flour so I used 1/2 whole wheat, 1/2 all purpose sifted. I don't normally keep buttermilk so I bought a small half-pint carton. Didn't want to waste the last 1/4 cup, so I put the whole thing in. I left out the coconut due to personal preference. The frosting recipe is small, barely covers the 9x13 cake top only, even after I added about 1/4 cup more sugar. Try canned frosting if you need more.

OMG
I've made this twice. I used the wheat flour, but was unsure, until I tasted it. It was out of this world. Everyone loved it. It is in my Favorites

the Best
I've been making this many times and bring it to parties as they always ask for it.They said it's even better than store bought. did exactly as the recipe says except the carrot as I add 1more cup,you could reaaly taste the carrots in it and that made this recipe a winner.It's a keeper.

The most moist carrot cake recipe I have ever had! I brought it to a dinner party last month and people are still talking about it. The only thing I did differently was use all purpose flour instead of whole wheat pastry flour. A new family favorite!
